Comal’s Abajo Dinner Series Welcomes Siembra Spirits

On Thursday, March 28th, Comal will welcome David Suro of Siembra Spirits for a special collaboration dinner showcasing three of Siembra’s handmade agave spirits as well as one-of-a-kind offerings from Pedro Jimenez’s Mezonte brand and Mónica Leyva’s Pajarote brand. This diverse collection of spirits, all imported by Suro Importers, will be enjoyed over a menu of Oaxaca-inspired dishes by Comal’s executive chef Matt Gandin. Dinner guests will have the opportunity to engage in conversation with David, Pedro, and Mónica and learn firsthand about their experiences bringing these traditional Mexican spirits to market.

Guadalajara native David Suro launched Siembra Azul Tequilas in 2005 and in the ensuing years has delved deeper into agave spirits produced using traditional methods: pit ovens, hand maceration, wood distillation. Since founding Siembra, David has tirelessly traveled the world, sharing his extensive knowledge of the rich history and time-honored traditions of tequila and mezcal production in Mexico.

Along the way, Siembra also began importing unique agave spirit brands such as Mezonte and Pajarote in addition to the Siembra Azul, Siembra Valles, and Siembra Metl brands.

Curator of all things agave and the mind behind Mezonte, Pedro Jimenez works in collaboration with producers across Mexico to ensure that they receive fair wages (see his Transparency Model) and recognition for their products. Mezonte is an NGO that promotes, supports, and preserves the production and practices of traditional agave spirits, featuring agave spirits from all over Mexico with an emphasis on Jalisco and Michoacán.

Inspired by her grandma Celfa, who often made “ponche” for special occasions, since 2011 Mónica Leyva has researched traditional methods of making ponche and liqueurs. Pajarote represents her personal vision and contribution to this great tradition.

This is the latest in Comal’s “Abajo Dinner Series”, an ongoing series of beer, wine, and spirits producer dinners (previous dinners have featured Del Maguey Mezcal, Mezcal Vago, wine companies like Bedrock, Arnot-Roberts and Wind Gap and beer companies like Fieldwork, Henhouse and Drake’s among others) held in Comal’s private dining room, Abajo. All previous events have sold out in advance.
